Over the river and through the woods, to Grandmothers house we go.....
How exciting! This is my daughter Aimee and this was her 1st flight on a plane (that she can really remember). We went from Hay River to Yellowknife and the trip was about 45 min. long. She was glued like this to the window for the entire trip. Thanks to the boys at Buffalo Airways, the trip was smooth sailing as always. The perfect 1st flight! She was in complete 'Aw' when we went through the clouds and saw no land below us (just lake). Aimee had the best time at grandmas house and it was so touching for me to watch how much love a little girl can give her family. Auntie Norenda and Uncle George, Cameron, Shawna & family all spoiled her like bananas!

Every year, around this time I get this crazy urge to want to learn how to knit. Well tonight I wanted to show you a picture of my pitiful attempt at yet again another scarf - but this year I am bound and determined to finish one! The rainbow yarn actually has made it easier for me to keep count of the little loops and (YAH!) 24 hours later I finally accomplished what is starting to look like a scarf!

Ok, so I'm not Martha Stewart, but the little kid in me still loves to mimic those I admire! Well this little blog is my little corner of the universe where I can document my favorite pastime - creativity.

Well my 1st contribution to this journal will have to be baked donuts that I made last week. I was at a local shop and purchased a 'donut factory' kit at a clearance shop for $5.00!! What a deal because I just saw the kit in the Sears X-mas book for $20! These donuts were fast & easy to make and I like that they were baked and not fried. Next go around I will try to make the cream filled ones!

Traditional Old - Fashioned Donuts
2 eggs
1 Cup sugar
1 Cup milk
1 Tablespoon shortening - melted (I used margarine)
2 Cups flour
2 Tablespoons baking powder
1/4 Teaspoon cinnamon or 1 Teaspoon grated lemon rind (we used the cinnamon and tossed in way more then a 1/4 teaspoon)
1/2 Teaspoon salt
1/4 Teaspoon nutmeg (optional - we left it out)

Preheat oven to 400 F. Prepare pans with small amount of butter (Apply with paper towel). In a large bowl beats eggs, and slowly add sugar while beating constantly. Stir in milk and melted shortening. In another bowl. mix flour, baking powder, salt, lemon rind or cinnamon and nutmeg. Shift these dry ingredients into the egg/sugar mixture and combine. Fill donut pan cups 1/2 fill and bake at 400 F for 10 min or until golden brown (In my oven these baked quick!). Also, I noiced using a piping bag made filling the pans a LOT easier. Add icing, sprinkles and enjoy!!
